Sourdough Zucchini Bread

Sourdough Zucchini Bread

Ingredients

  • 2¼ cups all-purpose flour
  • 1 teaspoon salt
  • ¾ teaspoon baking powder
  • ¾ teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2½ cups grated zucchini (about 1 large zucchini)
  • ½ cup sourdough discard
  • 1 cup brown sugar
  • ¾ cup butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F. Grease a large loaf pan or two small loaf pans and line with parchment paper.
  2. In a large bowl, whisk together flour, salt, baking powder, baking soda, and cinnamon.
  3. Add grated zucchini to the dry ingredients and toss to coat.
  4. In a separate bowl, combine sourdough discard, brown sugar, melted butter, eggs, and vanilla.
  5. Add wet ingredients to dry ingredients and gently fold until just combined.
  6. Pour batter into prepared pan.
  7. Bake for 55–60 minutes, until a toothpick inserted comes out clean or with a few moist crumbs.
  8. Cool in the pan for 1 hour, then transfer to a wire rack to cool completely.
